Costco Choice Boneless Short Rib
Costco 的美國牛肉一般都是 Choice 等級,這次的主角是美國冷藏去骨牛小排 (Boneless Short Rib)
,一般在外面零售商能買到的牛肉,有2cm厚就已經要偷笑了,這次買的厚度接近4cm,即使烹調過後縮水也還有3cm以上的厚度,整個就是爽阿!
烹調方面,新鮮的好食材,用最簡單的方式對待它就對了,開中火先把表皮煎熟,基本上一面只給他一次機會,每面都稍微煎過之後,轉小火蓋鍋蓋,悶一陣子就可以上桌了,這樣吃到的是最完美的原味,牛小排油脂比較多,甚至不用加油就可以了。
快吃完才想到要照相...
